Leftover Cupcake Trifle

Last weekend I made cupcakes for a graduation party—which went really well!

I did have a few Red Velvet and Vanilla Almond cupcakes leftover that I didn’t have frosting for. These were basically the reject cupcakes—I frosted and decorated the best-looking ones first. So what do you do with a handful of cupcakes that you don’t have frosting for? (To be honest, I did have a little bit of cream cheese frosting left… but not enough for all of the cupcakes.)

I decided that the leftovers would make a good trifle. They would be easy to cut up and add to a bowl with other layers of ingredients.

These cupcakes were very moist, so I worried that layering pudding would make cake mush. I did not want mush. Nobody wants mush. So I cut them into quarters. I don’t know what scenario you might find yourself in, but you could easily cut up regular cake too. Just try to get them all the same size. Put them in the oven at 250ºF for about 6 minutes. I did this to dry out the cake a little so it wouldn’t be so mushy.

While the cake is drying out, mix up the pudding you want. I chose to use Oreo pudding and chocolate pudding. I didn’t use all of the milk that the pudding called for because I didn’t want it to be too runny. I did ¾ the amount of milk for the Oreo pudding and ½ of the milk for the chocolate pudding. I also added two big scoops of Cool Whip to the chocolate pudding.

The leftover cream cheese frosting would also go well in this trifle, so I added it to my layer options with the puddings and Cool Whip.

Let the cake cool a little bit so it doesn’t melt the pudding.

You can pretty much layer this in however you want…but this is what I did:

1. Layer of Red Velvet cake quarters.

2. Dollops of cream cheese frosting.

3. Chocolate pudding.

4. Layer of white cake.

5. Dollops of cream cheese frosting.

6. All of the Oreo pudding.

7. Remaining cake and chocolate pudding.

8. Oreo crumbles.

9. Cool Whip.

10. Oreos on top to make it pretty.

 

That’s just what I did; you can do whatever you want. Maybe you want a different combination of flavors. It’s really up to you!
