Apple Salad: Twix and Butterscotch
I made this salad sometime in the beginning of July. And I didn’t write down the recipe because I thought it would be easy to remember, and frankly that I would be sharing it a lot earlier than the middle of August. However, I’m still sharing it with you all because I think one of the best things with salads like this is that they’re easily modified.
To make my life easier, I bought the bag of bite-sized Twix bars that come unwrapped. My biggest gripe with salads that call for candy bars is that you spend forever unwrapping the bards—which is not that big of a deal, but it’s still at time waster (in my opinion). I cut those tiny Twix bars in half and called it good for those!
Then I chopped up my apples into a size I thought was manageable. I think I did three apples … but really, you can do however many you want. You can start with just a couple and then add if you don’t think it’s got enough later. You’re also welcome to coat them in lemon juice if you think it will be a few days before it’s all eaten.
I also chopped up about half a cup of butterscotch chips. Again, adjust as you see fit. (If you can find mini butterscotch chips, they would work perfect!)
In a big bowl combine your pudding mix and about half the milk the box asks for. I used cheesecake-flavored pudding for that extra layer of flavor. But if you’re more of a vanilla fan, go with vanilla. Fold in a big container of Cool Whip. This will make the base of your salad.
Stir in the butterscotch chips. Then the apple chunks. Then the Twix.
I suggest refrigerating it for about an hour before serving.
It’s very tasty.
I made it on a weekend when my brother’s fiancé was visiting. She asked me what I was making and what was in it. Hope seemed genuinely excited about it. And when it came time to eat, she helped herself to a decent-sized spoonful. She praised its flavor and tastiness.
After she ate several bites, Hope asked for some Benadryl. I thought maybe she was having an allergic reaction to some pollen. No. She asked for some Benadryl because she is allergic to apples and her mouth was starting to itch. (Don’t worry, the Benadryl helped, and it makes for a funny story now.)
It’s yummy, but not recommended if you have any food allergies to the ingredients!
