Breakfast Parfait
I’m only calling this “breakfast” because I think it best fits the traditional ideas of breakfast. This recipe is also great for a snack—especially if you missed lunch, or you had a day where appointments made it impossible for you to get in three balanced meals. I’m suggesting this as a meal supplement only because this recipe makes so much parfait that it might spoil your supper. But you could easily cut it in half—or you could split it up into smaller servings.
First, I made my own flavored yogurt. Start with a cup of plain Greek yogurt. It’s funny, I’ve used plain Greek yogurt as sour cream before. It’s not particularly good plain, in my opinion. So I doctor it up. Add three spoonfuls of PB2, peanut butter powder. I didn’t use a measuring spoon, just a spoon out of the drawer. Add three spoonfuls of raw honey. It still won’t be sweet. But it won’t be as sour. This is quick and easy—and you can adjust it to your own liking.
Put 2/3 cup of your favorite granola at the bottom of a bowl. Pour the yogurt mixture over the top.
Cut up an apple into small pieces and sprinkle over the yogurt.
It’s simple. It’s easy. It’s super tasty.
If you’re splitting this up over multiple containers, pay attention to the following pro tips.
Pro Tip 1: don’t put the yogurt and granola on top of one another if you don’t want it to be soggy granola.
Pro Tip 2: coat the apple pieces in lemon juice so they don’t get brown too soon.
